酸辣湯 Hot and Sour Soup
六人份量 Serve 6
木耳絲 10g Yellow Auriculla
甘荀 1 pcs Carrot
竹筍 150g Bamboo shoot
豆腐 1pcs Tofu
蛋 1 Egg
豬肉 100g Pork
豉油 1tsp Soy Sauce
胡椒粉 1/8tsp White Pepper
水 3tsp Water
糖 1/2tsp Sugar
油 2tsp Cooking Oil
粟粉 1tsp Corn Starch

雞湯 500ml Chicken Broth
水 1000ml Water
鎮江醋/黑醋 9tsp Spicy Vinegar/Black vinegar
豆瓣醬 9tsp Chili Bean Sauce
老抽 1tsp Dark Soy Sauce
麻油 1tsp Sesame Oil
糖 3tsp Sugar
胡椒粉 1/4tsp White Pepper
鹽 1tsp Salt
粟粉 45g Corn Starch
水 45ml Water

1.木耳絲泡在暖水裡1小時
2.把豬肉切成絲,加人豉油、糖、胡椒粉、水、油和粟粉拌匀,醃30分鐘
3.把甘荀刨皮切成條狀,竹荀切絲,並加人木耳絲
4.豆腐切條狀
5.打發雞蛋
6.把以上材料煮熟,盛起,加入豬肉煮熟,拿起
7.豆瓣醬加入雞湯和水,攪拌均勻
8.粟粉加水,攪拌均勻
9.把材料放回湯裡,加鹽、糖和老抽,再加入粟粉漿,加上豆腐和已打發的蛋液,最後加上適量的鎮江醋和麻油,完成
